Sliced Thin Roasted Potatoes with Pancetta & Thyme

Ingredients
- 3 Tbsp butter, melted
- 3 Tbsp olive oil, extra-virgin
- 10 potatoes, russet, peeled
- Kosher salt,
- 4 shallots, peeled and sliced very thin
- 1/2 tsp red pepper flakes,
- 4 sprigs fresh thyme,
- 3 oz pancetta, cubed
I really like cooking with tomatillos. They have an acidic flavour that you have to be careful about, but they also have this plant substance that turns them into a thickened sauce without adding anything when you cook them down.
