Ebelskivers Danish Pancakes

  • 1 cup flour,
  • 1/2 tsp baking powder,
  • 1/4 tsp salt,
  • 1 1/2 tsp sugar,
  • 2  eggs, separated
  • 1 cup milk,
  • 3 Tbsp unsalted butter, melted
  • 1/2 cup jam,

This is our base Ebelskiver recipe we use. You can use any kind of jam. The Danes only eat this at Christmas time, but we have it for special brunches all the time. And, you can make them savoury as well.
