Ingredients
- 3 lbs beef shanks, boneless long-cut
- 5 cloves garlic,
- 5 allspice berries,
- 4 bay leaves,
- 1 1/2 tsp peppercorns,
- 2 onions, large, halved and sliced
- 2 1/4 cups dry white wine,
- 1/4 tsp ground cinnamon,
- 8 ounces chorizo sausage, Spanish-style, cut into 1/4 inch-thick-rounds
Every Christmas, I buy a Cook’s Illustrated for holiday reading. This is one of the recipes that caught my eye.
