Ingredients

  • 3 lbs beef shanks, boneless long-cut
  • 5 cloves garlic,
  • 5  allspice berries,
  • 4  bay leaves,
  • 1 1/2 tsp peppercorns,
  • 2  onions, large, halved and sliced
  • 2 1/4 cups dry white wine,
  • 1/4 tsp ground cinnamon,
  • 8 ounces chorizo sausage, Spanish-style, cut into 1/4 inch-thick-rounds

Every Christmas, I buy a Cook’s Illustrated for holiday reading. This is one of the recipes that caught my eye.
